Ingredients of White Chocolate Pumpkin Pancakes

  1. You need 2 Cups of Flour.
  2. It's 2 TSPs of Baking Powder.
  3. It's 1 TSP of Baking Soda.
  4. It's 3 TSPs of Cinnamon.
  5. It's 1 TSP of Apple Pie Spice.
  6. Prepare 1 Cup of Chocolate White Chips.
  7. Prepare 1 and 1/4 Cups of Pumpkin Puree.
  8. Prepare 1/2 Cup of Sugar.
  9. You need 1 of Egg.
  10. You need 1 and 1/2 Cups of Milk.
  11. It's 2 of Coconut Oil TBSs.
  12. You need Dash of Salt.

Combine pancake mix, water, pumpkin puree, oatmeal, pumpkin pie spice and cinnamon until fully incorporated. Sprinkle remaining white chocolate chips and chopped pecans onto pancakes once they are on the pan or griddle. Stir in ¼ cup shredded zucchini. Using a ladle or a large spoon, add about ¼ cup batter onto a hot griddle or nonstick pan.

  1. I mixed all ingredients in a Ninja Blender but don't over mix! They can also be mixed by hand with a whisk, dry and wet ingredients separately..
  2. In medium heat, melt butter and add batter when sizzling. Repeat. (I use 4 sauce pans at a time on the stove, I need to get a griddle!).
  3. Serve with syrup or peanut butter..

Cook pancakes until lightly golden, turning once. In a large bowl, combine pancake mix, cinnamon, nutmeg and cloves. In a small bowl, whisk eggs, buttermilk, pumpkin, butter and honey; stir into the dry ingredients just until moistened. Chocolate Chips: I used semi-sweet in this recipe, but mini, dark chocolate, white chocolate, or cinnamon chips would also be delicious! If you don't like chocolate chips in your pancakes, feel free to leave them out- they'll still be delicious.
